Cuvee Ginevra is a complex and elegant wine, having a great structure. It could be paired, in the same way, with light and refined dishes. This wine is made with 100% Garganega grape, which is carefully harvested by hand, in crates, with the selection of the bunches. As all traditional methods, Cuvée Ginevra has 2 fermentations: one in tanks and another in the bottle. Once this second alcoholic fermentation is complete the yeast dies and forms a sediment of lees in the bottle. Over a period of 40 months these dead yeast cells start to break down releasing chemical compounds into the wine, contributing to flavour of the wine, giving bread and toasty notes.
